Ingredients

  • Brinjal cubed : 1 nos
    Vaal beans (Lablab Beans) : 100 gm
    Potato cubed : 1 no
    Coriander leaves : 3 – 4 tsp
    Green chilies : 7 – 8 nos
    Onion : 1 no
    Garlic ginger paste : 1 tsp
    Coriander seeds : 2 tsp
    Cumin seeds : 1 tsp
    Turmeric powder : ½ tsp
    Sugar : 1 tsp
    Oil : 2 - 3 tsp
    Salt : as reqd

Step 1

Grind the coriander leaves, green chilies, garlic ginger paste, coriander seeds, cumin seeds and salt to a fine paste.

Heat oil in a pan, add onion and fry the ground masala paste with ½ tsp turmeric powder and a little water.

Cover the pan and cook till the oil separates from the masala.

Add the cubed brinjal, potato and vaal.

Add ½ cup water, cover the pan and cook on a low flame for 15 - 20 minutes till the vegetables are cooked.
