First chop brinjal into small pieces.
Heat oil in a kadai and add mustard seeds.When mustards splutters add urad dal and stir for 2 minutes.
Add red chilli and onions and saute for 2 minutes.
Add ground nuts and saute for 1 minute.
Add brinjal ,chilli powder,turmeric powder and salt to this and stir for 2 minutes.Add 1/2 cup water and cook for 5 minutes.
Then we have to make home made vangi bath powder for vangi bath powder, roast red chillies,urad dal,cinnamon,dhaniya and hing till golden brown.Grind to fine powde.now vangibath powder is ready.
Add vangi bath powder ,tamarind juice and cooked rice to this and stir all together for 2 minutes.
Now vangi bath is ready to serve.
