  • Heat the Coconut Oil/Ghee in a frying pan/Cheenachatty and add the Shallots/Onion slices and Red Chillies (if necessary, cut the Red Chillies into pieces) into the hot oil/ghee and stir the mix.
  • After about five minutes add Salt also into this mix and stir the mix further.
  • When the colour of the mix turns into golden/brown, put off the stove and allow to cool the mix for some time (if the mix is fried more, the powder will give a bitter taste).
  • Then smash the fried Shallots/Onion, Red Chillies and Salt mix with fingers or smasher.
  • Varutha Ulli Chammanthi Podi (fried Shallots/Onion Chutney Powder) is ready. This will be a very tasty side dish to serve with cooked Rice, because this powder can mix with the cooked rice and eat directly. Since this is a very economically viable and less preparation time required recipe, generally some people will not require any other side dish than this Ulli Chammanthi Podi.
