Step 1

For preparing veg vermicelli biryani, roast the vermicelli till it becomes golden brown in colour. Keep it aside.

Step 2

Heat ghee in a pan.

Step 3

Add in onions, carrot, beans, cauliflower, peas and potato. Saute well till it cooks and keep it aside.

Step 4

In the same vessel add in some more ghee and heat it.

Step 5

Roast cloves, cardamom and cinnamon.

Step 6

Then add 1 cup of water, vermicelli and salt. Mix it well.

Step 7

Add in the sauteed vegetables and mix well.

Step 8

Then add in green chillies, ginger, coriander powder, garam masala, chilly powder, turmeric powder, mint leaves and curry leaves. Mix it well and cook on low flame.

Step 9

Allow it to cook till the water evaporates.

Step 10

Garnish with coriander leaves.

Step 11

Veg vermicelli biryani is ready. Serve hot with chutney.
