Boil vegetables with some salt and just enough water. Steam the chopped spinach and drain off the water from the vegetables. See that the vegetables do not overcook.
To prepare white sauce:
Melt the butter on a low heat, add flour and stir with a whisk till you get a nutty aroma.
Add milk gradually, stirring all the while with a whisk so that no lumps are formed. Simmer on low heat stirring all the while till the mixture thickens.
Add + tsp grated nutmeg and salt to taste.
Drain of all the water from the vegetables and add them to the white sauce.
Cook for 2-3 minutes on a low flame.
Pour this mixture into a casserole dish and sprinkle grated cheese on top.
Preheat oven to 250 degree Celsius and bake for 20 to 30 minutes or till top is browned.
(mixed vegetables can be used according t o your taste-mushroom, peas, corn or only spinach and corn etc.)
