Ingredients

Directions

Step 1

Heat a small amount of oil in a pan.

Step 2

Saute curry leaves, green chillies, ginger and onion.

Step 3

When they turn golden brown, add crushed fennel seeds, chilly powder, cinnamon powder, cloves powder, turmeric powder and saute for 3 minutes.

Step 4

Add beetroot, carrot and salt and cook for 5 minutes.

Step 5

Finally add potatoes and coriander leaves and mix well.

Step 6

When the mixture is cool, make an oval or round shape and keep it aside.

Step 7

Heat enough oil for frying. Dip each cutlet in the egg and on the bread crumbs and stir into the oil.

Step 8

When both sides of Vegetable Cutlets are golden brown, remove from the oil.

Step 9

:- Vegetable Cutlet is ready.

Step 10

:- Serve Vegetable Cutlet hot.

Step 11

:- Enjoy the Vegetable Cutlet

Hi ! Consider adding 1/2 cup of boiled peas to increase the protien content. Use a non stick spray to coat the pan instead of oil to decrease calories and fats. Than you can enjoy good taste with no guilt! Happy cooking!

Good recipe. Instead of dipping the cutlet in egg, u can try dipping in the cornflour mix(cornflour + water). Good for a veggie:))))

Good recipe, albeit a little on the spicier side. For those of you who like to experiment, you could try out veggies like cabbage, capsicum (even the red/yellow ones to make the cutlet more colorful)-the list is endless!

I found the recipe to be rather nice. Had never made vegetable cutlets (always been fish/meat). Tried this one out and it came out well, albeit, a mite too spicy. So, those of you who want it moderately-spicy, go easy on the spices. A good recipe, in all.

It is a very good recipe. Suggested variation: boil 2 potatoes n mash them well. remove the sides of 4 bread slices, dip them in water n sqeeze out the excess water. mix the veggies with the mashed potatoes n bread. shape them into cutlets. add a little water to 4 tsps of cornflour(instead of egg) n make a paste...not too concentrated. dip the cutlets in this paste n them roll them in bread crumbs and fry. PURE VEG Y`KNOW...

very nice... if u want to make purely veg than u can use smashed potato+corn flour as outer covering. for making it crispy u can roll it over little rawa and than deep fry it.
