Step 1

For preparing vegetable sandwich, first preheat oven to 450 degrees.

Step 2

Spread the vegetables on a baking tray: mushroom, onion, cucumber, carrots, red capsicum and mix well with olive oil. Cook for 12 minutes until veggies are tender.

Step 3

Grind spinach, garlic, cheese and mayonnaise into a smooth mixture.

Step 4

Spread the spinach paste on the bread.

Step 5

Top with the cooked vegetables and place a slice of bread on top of it.

Step 6

Vegetable Sandwich, a yummy as well as nutritious breakfast recipe for kids as well as elders is ready. Serve the vegetable sandwich with ketchup.
