Step 1

For preparing vishu rice sweet, take a grinder and grind the grated coconut with a little water. Strain it and keep it aside.

Step 2

Cook the raw rice with 4 cups of coconut milk and salt.

Step 3

When it is done, add the leftover 1 cup of coconut milk, cardamom and sugar. Allow it to cook till it becomes thick.

4)Remove it from the flame.

Step 4

Take another vessel and heat ghee in it.

Step 5

Fry the cashewnuts and raisins separately.

Step 6

Add this into the rice mixture and mix well.

Step 7

Grease a flat vessel with ghee or oil and pour the rice mixture into it.

Step 8

Allow it to cool.

Step 9

Vishu rice sweet is ready. Cut it in cubes and serve cold.
