Step 1

For preparing west indian fish cutlets, place the fish fillets in a lightly greased steamer and steam gently until cooked. Remove from the steamer and allow it to cool.

Step 2

Crumble the steamed fish fillets into a large bowl, using a fork.

Step 3

Mix in the mashed potatoes, spring onions, salt, pepper powder, green chillies, ginger, coriander leaves, mint leaves and one egg.

Step 4

Shape into cutlet shape and dip the cutlets in the remaining egg.

Step 5

Then coat it in breadcrumbs.

Step 6

Heat oil in a frying pan and fry the cutlets till it becomes brown on both the sides.

Step 7

West indian fish cutlets are ready. Serve hot with ketchup.
