Ingredients
  • Baingan / eggplant cut –
  • in to ½ cubes : 1 medium –
  • Potatoes peeled and cut –
  • in to ½ cubes : 1 – 2nos
  • Chopped Tomato :1 no –
  • Whole jeera / cumin seeds : 1 tsp –
  • Onion seeds / kalonji : 1 tsp –
  • Coriander powder
  • Dhania powder : 1 tsp –
  • Jeera powder : ½ tsp –
  • Turmeric / haldi powder : ½ tsp –
  • Red chili powder : ½ tsp –
  • Garam masala powder : ¼ tsp –
  • Oil : 3 tsp –
  • Salt : as reqd –
Instructions
  1. Heat the oil in a kadai and add whole jeera and onion seeds/ kalonji.
  2. Add the cubed brinjal /eggplant and potato and mix well.
  3. Add chopped tomato, coriander powder, jeera powder, red chili powder, turmeric powder,garam masala powder and salt.
  4. Add ¼ cup water and cook covered on a low flame for 15-20 minutes till the vegetables are cooked.
  5. Serve with roti.
