  • Bittergourd(medium sized) – 3nos
  • Beetroot 1no
  • Carrot 2nos
  • Onion 1no
  • Red chilly powder – 3/4tsp
  • Oil(or as per requirement) – 2tbsp
  • Salt(As reqd) –
  1. For preparing bitter-gourd with mixed vegetable fry, cut all the veggies to small cubes (smaller the size better is the taste. It can save the cooking time too)
  2. Heat oil in a Kadai. SautT bitter gourd first in low flame till it is cooked half-way (take care not to close the lid of the kadai as the condensed water can make the taste different).
  3. Then add beetroot & carrot cubes to it. SautT it again.
  4. Finally add onion and sautT till all the veggies are properly cooked.
  5. When the veggies are half cooked, sprinkle salt as per your taste.
  6. Add chilly powder and curry leaves and sautT for few more minutes till all the vegetables are properly cooked.
  7. Bitter-gourd with mixed vegetable fry is ready.
