Instructions
  1. For preparing brinjal fry, marinate the sliced brinjals with salt and pepper. Keep it aside. 2)Sift together maida, rice flour, baking powder and salt in a bowl.
  2. In another bowl beat the egg yolk and mix it with water.
  3. Mix the egg mixture with the dry ingredients to make a smooth batter.
  4. Heat oil in a deep frying vessel.
  5. Dip the marinated brinjals in the batter and fry it in oil on low flame till it becomes golden brown in colour.
  6. Drizzle olive oil and sprinkle pepper.
  7. Garnish with fresh basil.
  8. Brinjal fry is ready. Serve hot.
