Instructions
  1. For preparing capsicum-potato omelet, in a bowl, beat in eggs, onion, green chillies, salt and pepper powder.
  2. Toss in the sliced capsicum and mix gently.
  3. Keep it aside for 1/2 an hour to allow the flavors to infuse in properly.
  4. Meanwhile marinate the sliced potato in salt for 5 minutes and deep fry it in oil till done. Remove and keep it aside.
  5. Heat a frying pan and pour half of the egg mixture. Place the fried potato on one side of the omelet.
  6. Drizzle a little oil around the sides of the omelet and fry it on both the sides on low flame till done.
  7. Repeat the procedure with the remaining egg and fried potato.
  8. Capsicum-potato omelet is ready. Serve hot with bread.
