  1. Preheat the oven to 200 degree cen 375 degree f or Gas Mark 5.
  2. Sieve flour together with baking powder and soda bicarbonate thrice.
  3. Mix and beat well the powdered sugar and oil.
  4. Add egg yolks and beat for 2 mins.
  5. Add all the dry ingredients.
  6. Pour in honey.
  7. Add vanilla essence.
  8. Beat the egg whites lightly stiff and fold into carrot mixture.
  9. Place in a greased tray dusted 8 cups capacity.
  10. Bake for 1 1/2 hrs.
  11. Remove from the oven and cool in the tin.
  12. Turn it over to a cooling rack.
