  1. Boil water along with the cardamom powder, bay leaves , cloves and salt.
  2. Add rice and cook till half done.
  3. Drain the water and keep aside.
  4. Heat oil in a pan.
  5. Fry the onions and ginger- garlic paste till pink.
  6. Add salt, garam masala and chilly powder and chopped tomatoes.
  7. Add curd and cook till it gets a gravy – like consistency.
  8. Add the mutton pieces and cook till they are tender.
  9. Cut the potatoes into round rings and deep fry them.
  10. In a pan, pour ghee, then spread 3-4 tbsps of rice in this, followded by a layer of mutton and fried potatoes over it. Then make another layer of rice and top it up with the remaining mutton and fried potatoes. This should be followed by another layer of rice (the rice should be the top most layer).
  11. Add saffron dissolved in milk and sprinkle it all over.
  12. Add rose water for flavour.
  13. Cover with a lid and cook till rice is done.
  14. Garnish with grated carrot.
  15. While serving, insert the tablespoon from a side of the dish so that all the different layers come out neatly.
