Chettinad Urulai Curry
This is a recipe for Chettinad Urlai/Baby potato Roast. Chettinad cuisine is so famous for its freshly grounded masala powders .This is one such very aromatic and delicious curry from chettinad . This curry goes very well with variety rice or chapati / roti too. first step is shallow roast the spices and the next is to saute onions, tomatoes to bring out this delicious curry.

Ingredients
  • baby potatoes 1/2 kg –
  • TO GRIND –
  • dhania 2 tsp –
  • red chili 3 no. –
  • Ginger garlic paste : 1 tsp –
  • cumin seeds 1/2 tsp –
  • elachi 1 –
  • kalpari bark 1 –
  • star anise 1 –
  • pepper 1/2 tsp –
  • Curry leaf –

Instructions
  1. pressure cook potatoes
  2. shallow roast red chilli ,dhania, ginger garlic,cumin seeds,elachi,kalpari bark,star anise,pepper,cury leafs .
  3. in oil saute onions, ginger garlic
  4. to it add tomatoes, green chili, curry leaves, turmeric,red chili powder, coriander powder.
  5. to this add boiled potatoes and salt
  6. now grind the shallow roasted with coconut
  7. add the coconut paste to the gravy and cook till oil separates and serve
