Chicken Sesame Coin
Herbed chicken mince piled on bread rounds and deep fried

  • Chicken Mince – 100gms
  • Carrots(chopped) – 2tbsp
  • Fresh Herbs(chopped, rosemary or cilantro) – 1tbsp
  • Onion(chopped, medium size) – 1/2piece
  • garlic(minced) – 1/2tsp
  • Green chilly(de-seeded and chopped) – 1/4tsp
  • Celery(chopped) – 2tbsp
  • Salt(to taste) –
  • Sesame seeds 2tbsp
  • White bread – 4thick
  • Egg(whisked) – 1no
  • Bread crumbs 1/2cup
  • Biscuit cutter(round shape or any other) –
  • Oil(for deep frying.) –
  1. Wash the chicken mince and leave to drain and set aside.
  2. Heat oil in a pan, add the chopped onions, garlic and chilly and sautT till translucent.
  3. Add chicken and stir fry till the colour of the flesh changes to white. :- The pan should be sufficiently hot so that the chicken will not cook in its own stew.
  4. Season with salt and add celery. Stir till well combined and the chicken is cooked.
  5. Add fresh herbs and stir well.
  6. Remove from the stove and leave to cool.
  7. Use the biscuit cutter and cut rounds from the bread.
  8. Pile the chicken mixture on top of the rounds.
  9. Press down firmly, removing bits that stray from the rounds.
  10. Lay the coins face down on sesame seeds, dip it beaten eggs and then in bread crumbs.
  11. Leave to chill in the refrigerator.
  12. Deep fry the coins in heated oil till golden brown.
