  • Khuskhus - 50 gms
  • Onions(finely cubed) - 2 nos
  • Ginger(grated) - 1 tsp
  • garlic(grated) - 4 cloves
  • Chilly powder(A pinch) -
  • Cumin powder(Jeerakkam) - 1/2 tsp
  • Pomegranate - 1/2 cup
  • Preserved lemon(cut into 4) - 1 no
  • Saffron threads - 1 tsp
  • Chicken stock - 2 cups
  • Hot water(As reqd) -
  • Pepper corns(crushed) - 1 tsp
  • Mint leaves(finely chopped) - 2 tbsp
  • Parsley(chopped) - 2 springs

Instructions
  1. For preparing chicken tagine with khuskhus, soak saffron in chicken stock and keep it aside.
  2. Heat olive oil in a vessel, sautT the onions, ginger, garlic and cumin powder for 1 minute.
  3. Toss in the chicken and mix well.
  4. Add in the saffron-chicken stock, crushed pepper corns and preserved lemon. Mix it well and remove it from the flame.
  5. Put this in a tagine and bake it on 150 degrees celsius till the chicken becomes tender.
  6. Garnish the chicken with parsley.
  7. Meanwhile, soak the khuskhus in hot water.
  8. Mix in chilly powder and salt. Cover and keep it aside for 5 minutes.
  9. After 5 minutes, add in the pomegranate and toss the khuskhus with a fork.
  10. Garnish the khuskhus with mint.
  11. Chicken tangine with khuskhus is ready. Serve the chicken tangine with khuskhus.
