  • Coconut milk - 2 1/2 cups
  • Lime leaves - 4 nos
  • Fish sauce - 2 cups

  • Thai brinjals(halved) - 150 g
  • basil leaves - 2 springs

  • Coconut milk - 2 1/2 cups
  • Lime leaves - 4 nos
  • Fish sauce - 2 cups
  • Brown sugar - 1 tsp
  • Thai brinjals(halved) - 150 g

Instructions
  1. For preparing chicken with thai brinjals, heat oil in a vessel.
  2. Add the green curry paste and fry until there is a nice smell.
  3. Stir in half the coconut milk little by little. Cook over low flame for 5 minutes, until the oil begins to separate.
  4. Then add chicken, lime leaves, fish sauce, sugar and brinjals. Cook for 5 minutes then stir in the remaining coconut milk.
  5. Allow it to a simmer and cook until the chicken and brinjals are done. Remove it from the flame.
  6. Garnish with basil leaves.
  7. Chicken with thai brinjals are ready. Serve hot with noodles.
