  • French beans(chopped) - 115 g
  • Mushrooms(chopped) - 225 g
  • Coconut milk - 2 1/2 cups
  • Red curry paste - 1 tbsp
  • Fish sauce - 3 tbsp
  • Palm sugar - 2 tsp
  • Bean curd(rinsed and cubed) - 175 g
  • Lime leaves(torn) - 4 nos
  • Red chillies(slit) - 2 nos
  • Coriander leaves(chopped) - 2 springs

Instructions
  1. For preparing coconut bean curd curry, pour 1 1/2 cups of the coconut milk in a vessel. Cook until an oily sheen appears on top.
  2. Add the red curry paste, fish sauce and palm sugar to the coconut milk. Mix well.
  3. Toss in the mushrooms. Mix well and cook over a medium heat for about 1 minute.
  4. Pour in the remaining coconut milk and allow it to boil.
  5. Add the French beans and cubes of bean curd and allow to simmer gently for another 4-5 minutes.
  6. Stir in the lime leaves and red chillies.
  7. Garnish with coriander leaves.
  8. Coconut bean curd curry is ready.
