Ingredients
  • Basmati rice – 2cups
  • Coconut milk 2cups
  • Water 1cup
  • Cardamom(Elakka) – 1no
  • Cinnamon(Karugapatta) – 1stick
  • Cloves(Grambu) – 2nos
  • Bay leaf(Vazhana ela) – 1no
  • Onion(Big Onion, Do not cut but poke it with knife all over so the flavor is released) – 1no
  • Ginger(50 grams, Do not cut but poke it with knife all over so the flavor is released) – 1piece
  • Ghee 1tsp
Instructions
  1. Heat up a cooker.
  2. Add ghee and fry cardamom, cinnamon, cloves and bay leaf.
  3. Add water.
  4. When water boils, add coconut milk, onion, ginger, rice and required salt.
  5. When it gives a boil, close the cooker and remove after 5 mins from stove.
  6. After 5 mins, open the lid and carefully remove and dispose the ginger, spices and onion from the rice.
  7. Let the rice cool and your coconut milk rice is ready.
  8. :- Serve with spicy curry, chicken curry or egg masala.
  9. :- Best with dried anchovies sambal, one spicy ommelate and few slices of cucumber.
