  • Potatoes(peeled, cubed and cooked, medium) - 2 nos
  • Chicken stock - 500 ml
  • Siamese ginger(chopped, Galangal) - 1” piece
  • Onions(chopped) - 2 nos
  • Lemon grass(crushed) - 1 tbsp
  • Bay leaf(broken, Karuga ela) - 1 no
  • Tofu(cubed) - 100 gm
  • Lemon juice - 1 lemon
  • Pepper powder(As reqd) -

Instructions
  1. For preparing coconut milk with potato soup, in a vessel boil the thin coconut milk, chicken stock, siamese ginger and onion. Then allow it to simmer covered for 10 minutes.
  2. Add in the thick coconut milk, pepper powder, lemon-grass, cooked potatoes, bay leaf and tofu. Allow it to simmer for 5 minutes.
  3. Garnish with salt and lemon juice. Remove it from the flame.
  4. Coconut milk with potato soup is ready. Serve hot.
