Instructions
  1. For preparing coconut pears pudding, preheat the oven to 180 degrees celcius.
  2. In a baking bowl, mix pears with required sugar, lime juice and 1 tbsp butter. Keep it aside.
  3. Sift maida, salt and baking powder together. Keep it aside in a bowl.
  4. To the bowl add in desiccated coconut powder, cashews and raisins. Mix it well.
  5. In another bowl beat the egg white till stiff peaks form. Keep it aside.
  6. In a big bowl, beat butter and required sugar until it becomes fluffy.
  7. Add in the egg yolks and vanilla essence. Mix well.
  8. Slowly fold in the maida mixture with milk. Mix it well till there are no lumps.
  9. Then fold in the beaten eggs gently.
  10. Spread this mixture evenly over the pears mixture and bake until it is firm.
  11. Coconut pears pudding is ready.
