  • Potatoes(peeled and cubed) - 2 nos
  • Cauliflower(cut into florets) - 1 cup
  • Yam(peeled and cubed, Chena) - 1/2 cup
  • Green peas(cooked) - 1/2 cup
  • Carrot(peeled and cubed) - 1/2 cup
  • Beans(chopped) - 1/2 cup
  • Onions(finely chopped) - 2 nos
  • garlic(finely chopped) - 2 cloves
  • Tomatoes(chopped) - 2 nos
  • Pepper powder(As reqd) -
  • Chaat masala - 1 tbsp
  • Coconut milk - 1 cup
  • Turmeric powder(A pinch) -
  • Chilly powder - 1 tsp
  • Coriander powder - 1 tsp
  • Curry leaves - 2 springs
  • Coriander leaves(chopped) - 2 springs
  • Dalda(As reqd) -

Instructions
  1. For preparing coconut vegetable gravy, heat dalda in a vessel and sautT the onions till it becomes transparent.
  2. Toss in the potatoes, cauliflower, yam, beans, carrot, tomato and garlic. Saute it for 1 minute.
  3. Add in chaat masala, turmeric powder, chilly powder, coriander powder and salt.
  4. Pour required water and allow the veggies to cook.
  5. Pour in the coconut milk and allow it to simmer for 3 minutes with coriander leaves.
  6. Then add in the pepper powder, green peas, coriander leaves and curry leaves. Allow it to simmer.
  7. Coconut vegetable gravy is ready. Serve hot with bread, rice, chapathi, etc
