Coconutty Mutton Curry With Coconut Rice

For Coconut Rice:
  • Basmati rice(washed) – 2cups
  • Water 1/2cup
  • Coconut milk 4cups
  • Cloves(Grambu) – 3nos
  • Bay leaf(Karugapatta) – 1no
  • Cinnamon(Karugapatta) – 1inch
  • Cashew nuts – 5tbsp
  • Raisins 2tbsp
  • Ghee(As reqd) –
  • Salt(As reqd) –
  1. For preparing coconutty mutton curry with coconut rice, heat oil in a large vessel over medium heat.
  2. Add the cumin seeds and allow it to splutter.
  3. Saute in the onions till it becomes light brown.
  4. Toss in the green chillies, ginger-garlic paste, salt, turmeric powder, coriander powder and garam masala. Saute it for 1 minute.
  5. Add in the mutton pieces, tomatoes and lime juice with required water. Allow it to cook.
  6. After it cooks pour in the coconut milk. Allow it to simmer for 5 minutes on low flame.
  7. For the coconut rice: 7)Heat ghee in a vessel, sautT the cashews and raisins. Remove it and keep it aside.
  8. Add in the cloves, cinnamon and bay leaf.
  9. Toss in the basmati rice and sautT it for 1 minute on low flame.
  10. Pour in the coconut milk and water with required salt. Allow it to cook on low flame with the lid till the water is absorbed completely.
  11. Garnish the coconut rice with roasted cashew nuts and raisins.
  12. Garnish the mutton gravy with coriander leaves.
  13. Coconutty mutton with coconut rice is ready. Serve the coconut rice with hot mutton curry.
