Coriander Pesto Noodles
Coriander Pesto noodles is the perfect late summer dish with the abundance of zucchini and tomatoes! It’s Vegan, Paleo, Gluten and Dairy Free. This greeny noodles is really a treat for eyes and our mouth too.

  • Noodles – 1½
  • Coriander – 1bunch
  • garlic 6pods
  • Cashew – 10
  • Green chili – 1
  • Lime juice – 1/2
  • Salt(as per taste) –
  • Oil 2tbsp
  • Capsicum 1/2
  • Onion 1
  • Corn – 1/4cup
  1. In blender add coriander. Garlic, cashew, lime and green chili make fine paste
  2. In pan add oil and toss onion, capsicum and corn well
  3. Now add pesto paste and salt mix well cook for 5 mins
  4. Now add noodles Mix gently and toss well
  5. Coriander Pesto noodles is ready to serve
