  • Corn Flour/Maize(Cholam podi) - 300 g
  • Mustard seeds - 1/2 tsp
  • Split Bengal gram(roasted, Kadala parippu) - 2 tbsp
  • Green chillies(finely chopped) - 3 nos
  • Sour curds - 150 g
  • Sodium bi carbonate - 1/2 tsp
  • Cashew nuts - 3 tbsp
  • Coriander leaves(finely chopped) - 2 springs
  • Oil - 1 tbsp
  • Salt(As reqd) -

Instructions
  1. For preparing corn flour idly, heat oil in a pan.
  2. Add in mustard seeds allow it to splutter. Then add in cashew nuts and roasted split bengal gram. Fry for 1 minute.
  3. Then add in green chillies and corn flour. Fry for 5 minutes on low flame.
  4. Remove from the flame and allow it to cool.
  5. Mix curd and salt in a bowl.
  6. Add the curd and a little water in the corn flour mixture. Mix well to make a smooth batter avoiding lumps. Keep it in a warm place for 5 hours to ferment.
  7. Mix soda-bi-carbonate and coriander leaves in the batter.
  8. Scoop the batter using a ladle and pour it into idly moulds.
  9. Steam it for 10 minutes.
  10. Corn flour idly`s are ready. Serve hot with any chutney.
