Mutton in coconut gravy with ghee rice

For ghee rice:
  • Basmati rice(washed and drained, rinsed) – 2cups
  • Water 4cups
  • Onion(finely sliced) – 1no
  • Cinnamon(Karugapatta) – 1inch
  • Cloves(Grambu) – 4nos
  • Cashew nuts – 5tbsp
  • Raisins(Unakka munthiri) – 1/2tsp
  • Ghee 1/2cup
  • Salt(As reqd) –
  1. For preparing creamy mutton with ghee rice, heat oil in a pressure cooker over medium heat.
  2. Add in cumin seeds and allow it to splutter.
  3. Saute in the onions till it becomes golden in colour.
  4. Then add the green chillies, garlic, ginger, salt, turmeric powder, coriander powder and garam masala. Saute for 1 minute.
  5. Toss in the mutton pieces and tomatoes. Mix well, close the lid and allow the mutton to cook(add water if required).
  6. Once the mutton is done, pour in the coconut milk and allow it to simmer till it becomes a bit thick.
  7. Stir in the lemon juice.
  8. Garnish with coriander leaves and pepper powder. Remove it from the oven and keep it aside.
  9. For ghee rice: 9)Heat ghee in a vessel and roast the raisins and cashews. Remove it and keep it aside.
  10. Toss in the onions, cloves and cinnamon. Saute it till it becomes light brown.
  11. Toss in the basmati rice and roast it in the ghee on low flame for 2 minutes.
  12. Pour 4 cups of boiling water with salt and allow it to simmer on low flame with the lid, till all the water has been absorbed.
  13. Remove the rice from the flame and let the rice stand, covered for 5 minutes.
  14. Garnish the rice with the roasted cashews and raisins.
  15. Creamy mutton with ghee rice is ready. Serve the ghee rice with the creamy mutton curry.
