Instructions
  1. For preparing cumin chicken, heat a frying pan over medium heat and dry roast 1 tbsp of the cumin seeds for 1-2 minutes until a nice aroma comes. Keep it aside.
  2. Heat the oil large pan ad fry the remaining cumin seeds, black peppercorns and cardamoms for about 2 minutes.
  3. Add in the green chillies, garlic and grated ginger. Saute for 2 minutes.
  4. Add the ground coriander and cumin to the pan with the salt, and cook over a medium heat, stirring, for a further 2 minutes.
  5. Add the chicken pieces, stir and mix thoroughly with the spices. Cover and allow to simmer for 25 minutes.
  6. Add the garam masala and reserved dry-roasted cumin seeds and cook for a further 5 minutes,
  7. Cumin chicken is ready. Serve hot.
