Lentils(Moong Dal) with Vegetables – Oriyan style

  • Lentils(Moong dal) – 100gm
  • Potato(cut into 8 pieces, medium) – 1no
  • Brinjal(medium size & cut into pieces, Vazhuthananga) – 1no
  • Squash(cut into pieces) – 50gm
  • Taro root(peeled and cut into half) – 4nos
  • Turmeric powder 1tsp
  • Salt(As reqd) –
  • Cumin seeds(Jeerakam) – 1tsp
  • Ginger(chopped) – 1″piece
  • Dry red chillies(Kollamulaku) – 2-3nos
  • Ghee 1
For seasoning:
  • Cumin seeds(A pinch, jeerakam) –
  • Red chilly powder(A pinch) –
  1. Boil the dal with salt and turmeric powder in a vessel for 10 minutes.
  2. Add potato, taro root and squash to it and allow it to boil for 10 minutes. Keep the vessel covered.
  3. Add brinjal and boil it for 5 more minutes, till everything is cooked.
  4. Heat ghee in a pan.
  5. Add cumin seeds, chopped ginger and red chillies.
  6. When the cumin seeds splutter, add dal.
  7. Add the cooked vegetables into it and mix well.
  8. Add cumin seeds and red chilly powder fried in ghee.
  9. :- It smells not only terrific but is tasty, easy to prepare and healthy to eat.
