  • Lemon rind - 1 lemon
  • Split chick peas - 4 tbsp
  • Peanuts - 6 tbsp
  • Cashew nuts - 5 tbsp
  • Turmeric powder - 1/2 tsp
  • Dry red chillies(broken) - 3 nos
  • Cloves(Grambu) - 3 nos
  • Bay leaf(Karugapatta) - 1 no
  • Cinnamon(Karugapatta) - 1 inch
  • Water - 2 1/2 cups

Instructions
  1. For preparing easy lemon rice, heat ghee in a vessel, sautT the cashews, peanuts and split chick peas. Remove it and keep it aside.
  2. Add in the cloves, cinnamon, bay leaf, turmeric powder and dry red chillies. Mix it well.
  3. Toss in the basmati rice and sautT it for 1 minute on low flame.
  4. Pour in the lemon juice, lemon rind and water with required salt. Allow it to cook on low flame with the lid till the water is absorbed completely.
  5. Garnish the lime rice with roasted cashew nuts, peanuts and split chick peas.
  6. Easy lemon rice is ready. Serve hot with chicken curry, mutton curry, etc.
