Instructions
  1. For preparing ginger gravy, soak tamarind in 1 cup of warm water.
  2. Heat coconut oil in a deep frying pan and fry the ginger. Drain the ginger out and leave it aside to cool.
  3. Blend the fried ginger pieces till smooth.
  4. In the same oil, sautT ginger paste, chilly powder, green chillies, turmeric powder, fenugreek seeds and asafoetida. SautT till the oil separates.
  5. Then add in the jaggery and mix well.
  6. Pour the tamarind juice and allow it to boil till the gravy becomes thick.
  7. In another vessel heat coconut oil and splutter mustard seeds.
  8. Toss in the curry leaves and dry red chillies.
  9. Pour it into the ginger gravy and mix well.
  10. Ginger gravy is ready. Serve as a side dish for onam sadhya.
