Ila Ada-Vazhayila Ada
Ela ada is a traditional Kerala sweet/snack which is made with rice flour/raw rice and coconut-jaggery filling. Vazhayila Ada is a very healthy and tasty dish which can be had as an evening snack. It is a traditional kerala evening snack; having authentic aroma and taste. It is one of the most famous desserts in Kerala and can be found in several areas of Tamil Nadu as well. Ela ada can be made using wheat and rice flour and the fillings can vary. It makes for one of the healthiest delicacies out there since it is steamed and not fried in oil or ghee like most desserts are. Ela translates to banana leaf, which is used to cover ada that is prepared using rice, coconut and jaggery. The smell and flavour of the banana leaf in which the ada is wrapped only adds to the taste of the steamed dessert. Banana leaves, bay leaves, turmeric leaves etc.are used for making Ada. It is prepared with very simple ingredients readily available in our kitchen. are used for making Vazhayila Ada. Do try it and let me know how it is.

  1. Take a large bowl and add rice flour and salt as required.
  2. Add warm water little by little to make a smooth dough.keep it aside.
  3. Take a saucepan,add grated coconut,jaggery,cardamom,(crushed) and 1/2 cup water
  4. Cook till the jaggery melts and water absorbs,it may take 5-6 minutes.then turn off the flame.
  5. Roll the rice in step 1 into a ball and flatten it onto the centre of a square piece of banana leaf. Place two tablespoons of the coconut-jaggery mix onto the flattened rice and fold the leaf and seal the edges.
  6. Steam this in an idli cooker for 15-20 minutes.
  7. Ila Ada is ready now
