  1. Roast the sooji lightly.
  2. :- Do not blacken it.
  3. Add this to the curd and mix well.
  4. Heat oil in a pan.
  5. Splutter mustard seeds.
  6. Once they get slightly roasted in the oil, pour it into the prepared batter.
  7. Mix well and add a pinch of baking soda.
  8. Finally, add chopped coriander leaves and curry leaves.
  9. :- If you want it to be spicy, you can add very finely minced green chillies and ginger too.
  10. Keep it aside for 5 – 10 mins.(Optional)
  11. Grease the idli plates and then pour the batter into them.
  12. Steam it for 10 mins.
  13. :- Serve hot/warm with coconut chutney and sambar.
