Ivy Gourd/ Kovakkai Pickle
Ivy Gourd Pickle is one of the famous and traditional pickles from Goa. The recipe is unique so is the method to make this pickle

Ingredients
  • Kovakkai 100gm –
  • red chili 8 no. –
  • Salt : 1 tsp –
  • Turmeric powder 1/2 tsp –
  • oil 25 ml –
  • fenugeek seed 2 tsp –
  • Garlic 4 no. –
  • Ginger : 1 small piece –
  • pepper seed 1 tsp –
  • clove 4 no. –
  • jaggery 4 tsp –
  • lemon 1/2 no. –
Instructions
  1. Chop the ivy gourd into round shape
  2. Rub salt and leave in the sun for 1 hour or 2 hour. Discard if any water is there.
  3. now take red chili, turmeric powder, clove, ginger, garlic, pepper seed, fenugreek seed, jaggery, lemon and salt
  4. grind it. if required add little water and make a paste
  5. Combine the paste with the ivy gourd. Marinate them for an hour more.
  6. Heat oil in a large pan once hot add mustard seed, curry leaves and asofoetida. Once they crackle add the marinated Ivy Gourd with salt. cook for 5 minutes but dont over cook
  7. now transfer into bowl and allow for 3 days
  8. ivy gourd pickle is ready
