Kerala Style Idli
Kerala Idlis are a traditional favorite throughout the whole of South India that blends well with a dish of hot spicy sambar and coconut chutney. Idli generally consumed as a breakfast dish, Kerala Style Idlis also termed ‘Savory Cakes’ are very nutritious too.Usually three parts of raw rice and one part of urad dal is soaked separately for six hours or even left overnight. Fenugreek seeds are added for increased flavor of idlis. Adding some cooked rice to raw rice while grinding, leads to increased fluffiness of Idlis. Soaked rice and lentils are ground separately to a fine batter and combined well. The Idli batter is kept aside for fermentation for required hours. The fermented rice batter is finally poured into idli molds and steamed for required minutes until Idlis are soft and spongy.The fermenting process of Idli batter aids in breaking down of starches and hence Kerala Style Idlis are very easily metabolized in body leading to easy digestion.   1. Soak raw rice with fenugreek seeds and uzhunnu parippu separately, for 6 hours. Grind both separately. Add cooked rice to ground raw rice batter and grind once again to make a semi thick liquid.
  2. Add salt and mix all together and keep the batter overnight for fermentation.
  3. :- You can also heat the oven for 5 mins at 250 degrees and the turn the oven off and keep it in the oven overnight to ferment.
  4. Pour the batter on the idli moulds and steam them.

The best combination for this Idli is Kerala Coconut Chutney made of red chillies and yummilicious Kerala Sambar. Uzhunnu Vada will make this as a wonderful full breakfast.
