Onion cream soup in chicken / vegetable stock

  • Onions(finely chopped) – 500g
  • Red grape juice – 500ml
  • Chicken / vegetable stock – 600ml
  • Cream 300ml
  • Rice – 40g
  • Sugar 25g
  • Multi(grain bread – 150g) –
  • Emmenthal cheese/Swiss cheese – 100g
  • Butter – 25g
  1. For preparing la creme d`oignon, saute onions in butter until brown in colour.
  2. Add in grape juice and sugar. Allow it to cook till it becomes a sauce.
  3. Pour this sauce into the stock. Add in rice and cream.
  4. Bring it gently to boil and allow it to simmer until cooked thoroughly.
  5. Blend it and strain it.
  6. Cut bread into small squares. Put grated cheese on top of each bread piece and grill till the cheese melts.
  7. La cream d`oignon is ready. Put the cheesy bread pieces on a plate. Serve with soup and garnish with extra cream.
