  • Button Mushrooms(cleaned) - 250 g
  • Lemon grass(finely chopped) - 2 tsp
  • Lemon leaf(chopped) - 6 nos
  • Lemon juice - 1 tsp
  • Ginger - 1 inch
  • Chilly powder - 1 1/2 tbsp
  • Coconut milk - 1 cup
  • Oil - 3 tbsp
  • Salt(As reqd) -

Instructions
  1. For preparing lemon thai mushrooms, pierce the mushrooms with a fork and marinate it with salt.
  2. Grind the ginger and chilly powder and keep it aside.
  3. Heat oil in a vessel and fry the above ground masala.
  4. Toss in the marinated mushrooms and stir fry it on low flame.
  5. Pour 1 cup of water, lemon grass, salt and lemon leaf. Allow it to cook till done.
  6. The add in the coconut milk and allow it to simmer on low flame for 2 minutes.
  7. Remove it from the flame and add in the lemon juice. Mix well.
  8. Lemon thai mushrooms are ready. Serve immediately.
