Maize / Makka Cholam Paniyaram
This chola paniyaram tops among all, since it gives a spongy texture when cooked and served hot.

Ingredients
  • Maize / Makka cholam 3 cup –
  • Idly rice 1 cup –
  • Urad dal 1 cup –
  • onion 2 no. –
  • coriander leaves 1/4 cup –
  • curry leaves 10 no. –
  • Salt to taste –
  • oil 10 tsp –
  • Mustard : 1/2 tsp –
  • broken urad dal 1/4 tsp –
  • bengal gram 1/4 tsp –
Instructions
  1. soak the maize / makka cholam and idly rice for four hours
  2. grind it by adding soaked urad dal and make as a batter and allow to get fermented
  3. finely chop the onion
  4. in a pan heat the oil and temper the mustard, broken urad dal and bengal gram
  5. add onion and saute it until it turn into brown
  6. transfer the onion into maize batter and add finely chopped curry leaves and coriander leaves
  7. mix well
  8. heat the oil in the paniyaram pan
  9. pour the batter and allow to cook in one side
  10. once it get cooked in one side then turn it and allow to cook other side
  11. now maize paniyaram is ready. serve with chutney
