Instructions
  1. For preparing mango rice, first soak rice in required water for 20 minutes. Strain it and keep it aside.
  2. Heat ghee in a pressure cooker and deep fry almonds and cashew nuts. Remove it when it becomes light brown.
  3. In the remaining ghee, fry green cardamoms and soaked rice. Add required salt, turmeric powder and hot water. When rice is cooked, remove from fire and allow it to cool.
  4. In another vessel, add in mango puree, grated coconut, sugar and saffron. Allow it to cook stirring it continuously till the mixture is thick.
  5. Mix cooked rice with this mixture in a oven-proof glass dish.
  6. Bake it in a preheated oven at 160 degree celcius for 5 minutes.
  7. Garnish with roasted nuts.
  8. Mango rice puloa is ready. Serve with chicken curry.
