Instant rice dish with mango for mango lovers

  1. Mix the cooked rice with the grated mango and salt and keep aside for 15 minutes.
  2. Heat ghee in a large pan over medium heat.
  3. Add mustard seeds, 2 red dried chillies broken into halves.
  4. Add green chillies and onions. Stir for few seconds.
  5. Add curry leaves, a pinch of salt and a pinch of turmeric powder. Switch off the flame.
  6. Add rice and saute for 2 minutes with the same remaining heat. 7)Fry the cashews and raisins in ghee.
  7. Sprinkle grated coconut, fried cashews and raisins onto the rice.
  8. Switch on the gas to low flame and slightly stir for another 3 minutes to mix all the ingredients well.
  9. :- Serve hot.
