Mint Rice – Lunch Box Dish
An easy rice dish with mint leaves (Pudhina)

  • Basmati rice – 1cup
  • Pudina leaves(without stems) – 2½
  • Green chillies 3
  • onion finely chopped – ½cup
  • Oil 2tsp
  • Mustard seeds 1tsp
  • Urad dal – 1tsp
  • Salt to taste –
  • To Garnish –
  • Ghee 2tsp
  • Cashew nuts – 1½
  • Kismis 1½
  • Tomato sliced into rings –
  1. Cook the rice and allow it to cool down.
  2. Wash the pudina leaves and grind them along with the green chillies and tamarind into a smooth paste.
  3. Heat the oil in a non stick pan on medium heat.
  4. Add the mustard seeds and allow it to crackle. Stir in the urad dal and roast it until it turns light golden brown.
  5. Add the onions and saute until the onions turn translucent.
  6. Now add the ground pudina mixture and salt. Give it a stir and let it cook for 2-3 minutes until the mixture turns a little thick.
  7. Turn off the heat and finally stir in the cooked rice to this mixture until well combined.
  8. Fry cashews and kismis in ghee till they turn golden brown.
  9. Garnish pudina rice with fried cashews, kismis and sliced tomato rings.
  10. :- Serve hot with raita , papad and green chutney.
