  • Drumsticks(cut into 2 inches piece) - 2 nos
  • Pumpkin(peeled, de-seeded and cubed) - 250 g
  • Potatoes(peeled and cut in 1 inch piece) - 3 nos
  • Lady fingers - 200 g
  • Tomatoes(sliced) - 2 nos
  • Chilly powder - 2 tsp
  • Turmeric powder - 1/4 tsp
  • Asafoetida(Kayam) - 2 pinches
  • Mustard seeds - 1/2 tsp
  • Tamarind(soaked in water) -
  • Curry leaves - 2 springs
  • Jaggery(grated, Sharkara) - 2 tsp
  • Oil(As reqd) -

Instructions
  1. For preparing mixed vegetable special, cook pumpkin and potatoes in salt water for 5 minutes.
  2. Then add in the drumsticks and allow it to cook till half done. Remove it from the flame.
  3. Heat oil in a vessel and fry the lady fingers till they become light brown. Remove it and add it to the previously cooked vegetables. Add sliced tomatoes too. Boil for a few more minutes and keep aside.
  4. Boil 1 cup of water with tamarind juice, chilly powder, turmeric powder, curry leaves, salt and jaggery. Allow it to cook over a low flame till the gravy becomes thick and pour it into the vegetable mix.
  5. Heat the remaining oil and splutter the mustard seeds and asafoetida. Put it into the gravy.
  6. Mixed vegetable special is ready.
