  • Carrot(peeled and chopped) - 1 no
  • Beans(chopped) - 1/2 cup
  • Beetroot(peeled and chopped) - 1/2 cup

  • Onion(finely chopped) - 1 no
  • Green chillies(finely chopped) - 2 nos
  • Curry leaves(finely chopped) - 2 springs
  • Coriander leaves(finely chopped) - 3 springs
  • Chilly powder - 1/2 tsp
  • Pepper powder - 1/2 tsp
  • Bread crumbs(As reqd) -
  • Vinegar - 1/2 tbsp
  • Egg(beaten with a pinch of salt) - 1 no

Instructions
  1. For preparing mixed veggie cutlets, pressure cook the potatoes, carrot, beans and beetroot in salt water.
  2. Drain the water well and smash all the veggies with a fork.
  3. Add in chilly powder, pepper powder, ginger, green chillies, onions, curry leaves and coriander leaves. Mix it well.
  4. If it is watery, put some bread crumbs and mix it.
  5. In a glass mix in vinegar and required salt. Pour this into the mixture. Add salt if required.
  6. Make cutlets with the mixture.
  7. Dip it in bread crumbs and then in egg.
  8. Heat oil in a frying pan and fry the cutlets till it becomes brown.
  9. Mixed veggie cutlets are ready. Serve hot with ketchup for snacks.
