  • Courgettes/zucchini - 400 g
  • garlic(finely chopped) - 1 clove
  • White grape juice - 110 ml
  • Tomatoes(cubed) - 50 g
  • Parsley(chopped) - 50 g
  • Pepper powder(As reqd) -
  • olive oil - 50 ml

Instructions
  1. For preparing mussel with courgettes, wash and cut the courgettes into rings. Boil in salt water for 4 minutes. Remove it and cool it in ice-cubes.
  2. Heat olive oil in a pan and brown the garlic slightly.
  3. Add in the whole mussels and grape juice.
  4. when the mussels are done, remove from the heat and take the mussel out of the shell.
  5. Strain the liquid and put it in a clean pan. Allow it to boil till the stock reduces a little.
  6. Then add in the tomatoes, parsley and pepper powder.
  7. Arrange the courgettes on a plate in a circle, put the mussels and pour the sauce over it.
  8. Mussel with courgettes is ready. Serve immediately.
