Instructions
  1. For preparing mussel rolls, scrub the mussel shells well.
  2. Bring a large pan of water to boil. Add in the mussels and remove as soon as the shells open. Discard any unopened shells. Remove the mussel meat from the shells. Keep it aside.
  3. Cut the bacon in half crossways, then lengthways. Wrap the mussels in bacon and secure the bacon with toothpicks.
  4. Combine olive oil, salt and lemon rind in a bowl with mussels. Mix well.
  5. Barbeque or grill the mussels over high heat on both the sides, until crispy outside.
  6. Mussel rolls is ready. Serve immediately.
