Ingredients
  • Boneless Mutton(cooked and shredded) – 400g
  • Mutton stock – 1.6litres
  • garlic(finely chopped) – 3cloves
  • Dried chipotle chillies(finely sliced) – 2nos
  • Avocado 1no
  • Lime juice – 2tbsp
  • Spring onions(finely sliced) – 5nos
  • Coriander leaves(chopped) – 2tbsp
  • Salt(As reqd) –
Instructions
  1. For preparing mutton and avocado soup, boil the stock in a large vessel with garlic and chipotle chillies.
  2. Meanwhile, cut the avocado in half around the stone. Twist apart and then remove the stone with a knife. Carefully peel off the skin, dice the flesh and immediately toss in lime juice to prevent discoloration.
  3. Arrange the spring onions, mutton, avocado and coriander leaves in the bottom of a large serving bowl.
  4. Ladle the hot stock over it .
  5. Mutton and avocado soup is ready. Serve hot with tortilla chips.
