  • garlic(finely chopped) - 2 tsp
  • Carrot(peeled and chopped) - 1 no
  • Beans(chopped) - 1/2 cup
  • Celery - 1/2 cup
  • Sherry wine - 1/2 cup
  • Basmati rice(rinsed) - 1/2 cup
  • Mutton stock - 1 cup
  • Thyme - 1 spring
  • Soya Sauce - 1 tbsp
  • Coriander leaves(chopped) - 2 springs

Instructions
  1. For preparing mutton pilaf, heat olive oil in a vessel and saute onion, salt, garlic and celery till it becomes transparent.
  2. Pour in the sherry wine and mix well.
  3. Add basmati rice, carrot and beans. Allow it to simmer for 2 minutes.
  4. Then pour in the mutton stock and thyme. Allow it to boil, then lower the flame.
  5. Cover the vessel and allow it to cook on low flame till the water is absorbed completely.
  6. Drizzle in the soya sauce and slowly mix it.
  7. Garnish with coriander leaves and remove it from the flame.
  8. Mutton rice pilaf is ready. Serve hot with any curry.
