Ingredients
  • Basmati rice – 1cup
  • Carrot 1no
  • Peas – 1/2cup
  • Cauliflower(chopped) – 1cup
  • Beans(chopped) – 1/2cup
  • Garlic pods – 2nos
  • Onion 1no
  • Chillies – 3nos
  • Cashewnuts
  • Raisins(Onakkamunthiri) –
  • Cloves(Grambu) – 2nos
  • Cinnamon(Karugapatta) – 1″stick
  • Turmeric powder(A pinch) –
  • Cardamom(Elakka) – 1no
  • Oil 2tbsp
  • Salt(As reqd) –
Instructions
  1. Cook the rice and allow it to cool by mixing little ghee to it.
  2. Cut all vegetables lengthwise and cook excluding onion and set aside.
  3. Heat oil in a pan.
  4. Add cloves, cinnamom, cardamom and turmeric powder. Fry till golden.
  5. Add onions, green chillies and garlic and fry till onions becomes translucent.
  6. Add all cooked vegetables and fry for a few minutes.
  7. Add rice and salt.
  8. Garnish with fried cashew nuts, raisins and coriander leaves.
