  • Coconut milk - 2 1/2 cups
  • Sugar(As reqd) -
  • Vanilla Essence - 1 tsp

  • Cashew nuts(chopped) - 1/2 cup
  • Almonds(flaked) - 10 tbsp
  • Raisins - 5 tbsp

Instructions
  1. For preparing nutty bread pudding, preheat the oven to 350 degrees celcius.
  2. In a bowl, mix in bread, eggs, coconut milk, sugar, vanilla essence, lemon juice, cashew nuts, flaked almonds, raisins, nutmeg powder, cinnamon powder and salt to a smooth mixture.
  3. Grease a baking bowl and pour the bread mixture into it.
  4. Place the baking bowl in a big baking pan filled with water.
  5. Bake it for 45 minutes
  6. Check if the pudding is done by piercing a clean knife in the center. If the knife comes out clean, the pudding is done.
  7. Remove it from the oven and allow it to cool in room temperature.
  8. Place it in the fridge and allow it to chill.
  9. Nutty bread pudding is ready. Serve cold with whipped cream, any flavor ice-cream, jam etc.
